The Appalachian Trail in New Jersey does a good job keeping as far away from development as possible. Although there are many road crossings, most of the trail is secluded. Having just traveled through the rocks of Pennsylvania, the trail tread is really enjoyable. This section has two fire lookouts the trail passes by. I have separate pages for those towers below. The Appalachian Trail also passes near the state highpoint but it requires a side out and back detour and some extra climbing. Instead, the AT has its own platform tower just below the State Highpoint for some views.
